Ingredients
- 2 cups 240g all purpose flour
- 4 eggs
- 2 tsp cinnamon powder
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp vanilla
- 2 tsp all spices
- 1 1/4 cup Olive Oil
- 2 cups 400g granulated sugar
- 3 and 1/2 cups grated carrots
- Rum (If Desired and the amount of your choice )
Method
1. Preheat your oven to 325°F and lightly grease a 9×13-inch baking Pan .
2. In a bowl, whisk together flour, baking powder, Rum, vanilla, cinnamon powder , allspices, and salt.
3.In a bowl, add eggs and whisk until lightly beaten. Add sugar and Olive oil and beat until well-mixed.
4. Add flour mixture and use a wooden spoon to stir until just mixed.
5. Add carrots and stir until evenly distributed, scraping the sides and bottom of the bowl with a spatula to make sure all of the batter is mixed properly .
6. Pour batter into baking dish and smooth the top.
7. Bake for 1 hour, until the center of the cake looks set. A toothpick can be used in center of cake to test if its set as well.
8.Cool cake in the pan until completely cool. This can be cooled within 1 hour time.
9.Lastly slice, serve and enjoy your carrot cake.
Storing Carrot Cake
Cake can be stored covered at room temperature without frosting .However if you decide to add frosting , if it’s not going to be eaten for a couple of hours, cake should be stored covered in the refrigerator because of the cream cheese.
