- 1 Cups Refine Cornmeal
- 2 Cups Water, For boiling
- 2 Cups Coconut milk
- 1/2 TSP salt
- 2 – 2.5 Tsp Vanilla
- 1/2 Tsp Cinnamon Powder
- 2 Sticks Cinnamon
- 1 Tsp nutmeg powder
- Sweetners(condensed milk/Brown sugar )
Method
1
1. Add 1 cups water and 2 cups coconut milk to Pot.
2. Add ½ tsp cinnamon powder, salt and 2 sticks cinnamon
3. Bring Pot of water and coconut milk to boil.
4.Mix Cornmeal and 1 cup water in a small bowl and stir.
5.Slowly add cornmeal mixture to boiling pot and stir.
6.Cover and allow to cook for the next 30 minutes. Ensure to sir every 7 minutes
7. Add vanilla, nutmeg, and sweeteners (condensed milk/Brown sugar).
8.Adjust consistency with water if desired.
9.Turn off the heat.
10. Serve Porridge hot and enjoy. (Can be serve with crackers or bread)
1.Do not add dry cornmeal alone to boiling pot, If that is done then porridge will be lumpy.
2.Ensure that you stir throughout the entire process.
